🐮 About Our Fold

Our Highland journey began in May 2022 with a single 12-month-old heifer named Lily Alice, brought over from just outside Glasgow, Scotland. Of course, one Highland is never enough and soon, our fold began to grow. Today, we’re proud to care for around 60 Highland cattle, including 20 breeding cows and our two magnificent bulls, Balach and Mac.

We’re based on a sustainable farm in Swinnsboro, Texas, where we raise a variety of pedigree breeds, including:

  • Highland and Dexter cattle

  • Boer goats

  • Herdwick, Hebridean, Shropshire, and Scottish Blackface sheep

And perhaps most importantly — we’re also raising four wonderful children, whose names inspired the name of our fold. Each of their first names contributed the first two letters:
Maeve, Hugo, Ruben, and Corin.

🐂 Why the Highland?

The Highland is one of the most distinctive and beloved cattle breeds in the world — known for their majestic horns and iconic long, shaggy fringe that often covers their eyes. Their thick coat features two layers:

  • A soft downy undercoat for warmth

  • A long outercoat (which can grow up to 13 inches) that’s naturally oiled to repel rain and snow

Thanks to this double coat and a thick hide, Highlands are incredibly hardy and well-adapted to harsh climates. In warmer regions, like Texas, they often shed their heavy coats during the summer and grow them back as cooler, wetter weather returns.
